Pojeong is a Korean restaurant located in Shanghai’s Koreatown in Hongqiao, specializing in mul naengmyeon, or Korean-style cold noodles. The dish features thin, chewy noodles made fresh daily from a blend of buckwheat flour and potato starch, extruded through a custom noodle press. Served in a chilled bone broth, the noodles are topped with cucumber, radish, pear, beef slices, sesame seeds, and a hard-boiled egg. For ease of enjoyment, the noodles are cut before eating. Each bowl comes with a side of house-made banchan.
