Colca
Colca is a Latin American restaurant with Peruvian and Spanish inflections by chef and Peruvian native Eduardo Vargas. Vargas is a Shanghai F&B veteran who has been here since 2002 and has opened (and closed) more restaurants than anyone can keep track of, the most reputable being Azul, open since 2002. Expect traditional ceviches, exceptional seafood entrées, juicy rice, and hearty beef dishes. Don’t miss the flan, a dessert that has captivated Shanghai since Vargas’ start, available at all his restaurants. Brunch served on weekends.
