VICE Shanghai is a chef-driven restaurant and bar in Xuhui led by luminary Chef Carlos Sotomayor. The space is split across two floors — a moody, dimly lit bistro downstairs where tables are packed close enough to spy on your neighbors’ orders, and a spacious lounge upstairs with high ceilings and a street-facing balcony. Carlos’ cooking pulls from his Peruvian heritage and years in Asia, resulting in dishes that are broad in influence but clear in identity — think a braised lamb shoulder with desert chives, a chicken and abalone claypot with glutinous rice, and salmon marinated with leche de tigre. Behind the bar, a J.Boroski alum keeps things interesting with a focus on martinis. Don’t skip the beef noodles, available on the bar bites menu.
