Xibo Restaurant & Bar is a long-standing Xinjiang restaurant in Shanghai, beloved by many for their ethnic Xinjiang and Xibonese minority cuisine. Established in 2009, Xibo is so named for the Xibonese people, an ethnic minority from northwest Xinjiang. Founder/operator Atina Kuo is Xibonese, and hails from Chabuchaer, Xinjiang, the home of the ethnic minority. Atina sources many key ingredients directly from Xinjiang and nearby Inner Mongolia, and some even harvested from her family farm, including lamb, peppers, vegetables, dried beans, and more.

The large menu features plenty of options, ranging from crunchy desert chives as a cold salad to whole baby lambs that can feed an army. You could enjoy a one/two person meal with a rack of fried lamb chops, a veg side, and pilaf to share, but truthfully, the best way to explore Xibo is with a large group. Xibo also has Xinjiang wines and solid cocktails.

Favorite dishes include: Xibonese Susskind Stew, Wild Bachu Mushrooms, Big Plate Chicken, Lamb Skewers, Roasted Lamb Leg, Pilaf, and Ding Ding Noodles.

Multiple locations in Shanghai. Changshu Road is the first location, and most popular for its terrace.
