That’s right, I’m back at it again. This time, I’m doing a collab with French rotisserie restaurant Dodu, serving up whole-roasted ayam percik from July 2 to July 18.
What is Ayam Percik?
What is ayam percik? It’s a Malaysian dish of roasted or grilled chicken that has been marinated in classic Southeast Asian spices. You might have sampled it at some of my previous pop-ups.
Usually, it’s chicken thighs or drumsticks, but this time, I’m marinating whole chickens overnight with fresh turmeric and ginger, cumin, curry spices and aromatics, fresh lemongrass, and coconut cream. Chickens are then set on the rotisserie, roasted to a crispy finish.
It comes served with a tangy, mildly spicy sauce that’s a blend of the marinade, fortified with more coconut cream, tamarind and lime juice.
It’s on the menu at Dodu from July 2 to July 18!
