Buffet Highlights
Highlights of the buffet spread include a lavish chilled seafood bar and live carvery — the stations to make a bee-line for. In addition, there’s also a salad bar, hot and cold Western and Chinese dishes, freshly baked breads, cold cuts and cheese, winter warming soups, dim sum, and festive desserts.
The selection of seafood includes cooked prawns, crab legs, green mussels, jade whelk, and wine-marinated crayfish, as well as salmon, tuna, and yellowtail sashimi and sushi. Freshly shucked oysters are also served with shallot mignonette and fresh lemon.
Setting the festive mood is the carvery station, which features roasted meats of prime rib, whole turkey, honey glazed ham, and lamb rack, as well as Hong Kong-style roasted duck and crispy pork belly. It’s all carved to order, served piping hot with condiments of mustards, cranberry sauce, and red wine jus.
Freshly baked loaves and rolls accompany the spread of imported cheeses and cold cuts, including Comte and manchego cheese, as well as smoked salmon, chorizo, and air-dried beef.
Western dishes see festive sides of cauliflower gratin, sautéed Brussels sprouts, roasted baby potatoes, and butternut squash soup. Meanwhile, Chinese cuisine features steamed dim sum, drunken prawns, black pepper beef, wok-fried clams, and more.
Expect plenty of festive desserts and Christmas-themed sweets on the buffet, including Christmas yule cakes, apple pie, Christmas pudding, and panettone. There will also be a chocolate fountain and an ice cream station.
Lively Christmas Performances
Portman’s Restaurant will host musical ensemble 3PC LA BAND and singer Alejandra Acosta, who will perform three sessions on both nights.
