Located on the ground floor of INS within Fuxing Park, Fuxing Project is a three-pronged concept — bakery, bistro, and brunch spot rolled into one. It’s the kind of place where you can roll in for a morning coffee and a croissant, ease into eggs benny for brunch, and come back later for dinner.

INS might draw an evening party scene, but during the day, it’s tranquil. The terrace at Fuxing Project is a big draw, running the length of the storefront facing the greenery of the park.

In the back, there’s a warm-lit dining room with a cozy bistro feel.

On weekdays, it’s a chill affair, but on weekends, it does get busy, especially with families letting their kids run around in the open space. Come nightfall, the same space transforms into a bistro setting, serving small plates with a Japanese touch.

The Food

The food leans into French-Japanese fusion — koji-aged meats and light touches of miso, soy, and katsuoboshi. Heavier hitters like mentaiko udon carbonara and panko-fried burrata lean fully into that fusion.

The approach makes sense, since Fuxing Project is run by the Sake-X Group (Sake Ichi, Ichi Roll, Umamiya, etc.), a group with a Japanese-concept focus. Chef Alexander Bitterling pulls it together without overcomplicating things.

Baked goods are also a big part of the picture. They’re made fresh daily on-site: baguettes, sourdough loaves, cakes, pies, egg tarts, and mini sandwiches. And since bread is such a big part of their identity, they’ve built the “Sourdough Brunch” around it, using those fermented loaves as the base for most dishes.

The brunch menu runs daily from 11am to 4pm, so if you’re looking for a weekday spot to catch some sun and take it easy, this is it. Here’s what to expect from the new lineup.

Sourdough Brunch

The Sourdough French Toast Deluxe (¥98) is the star of the menu. Thick-cut sourdough soaked in a dashi-spiked egg mix, then pan-seared, topped with tamari-glazed foie gras, poached eggs, and fresh Yunnan black truffle. The ginger-sweet tamari sauce pulls it together — unapologetically rich and indulgent.

Taking a different route, the Shrimp Toast & Poached Eggs (¥98) features sourdough seasoned with mentaiko and shrimp paste, then deep-fried. It’s topped with sweet marinated shrimp, crunchy asparagus, tangy Danish-style mayo, cod roe, and wasabi-spiked hollandaise.

The Koji Aged Wagyu Steak & Eggs (¥168) is a classic breakfast plate, just fully loaded. A generous cut of wagyu tenderloin, toasted sourdough with smashed avocado, poached eggs with a truffle-wasabi cream, plus portobello, sausage, bacon, and a shio kombu salad. The koji aging adds a subtle nuttiness to the steak.

The Fried Monkfish Bun (¥88) is a dark horse. It’s like a luxe Filet-O-Fish, but so much better. Crispy beer-battered monkfish, soy-marinated salmon roe for a pop of umami, and smoked cheese, all on a brioche bun with tartare sauce. This was my favorite of the bunch.

Almost Nordic in nature, the Smoked Mackerel Tartine (¥88) is served cold on toasted sourdough with tartare sauce, house pickles, mustard seeds, and lettuce. It’s for those who like a light, slightly tangy-smoky profile.

Premium beef tenderloin gets the spotlight in the Steak Tartare (¥98), with black garlic giving it an Asian-inspired punch. House-smoked cheese gives it depth, and pickles for contrast. Served with crisped bread.

On the heavier side, there’s the Mentaiko Carbonara Udon (¥108). Swimming in a creamy mentaiko-yolk sauce, this one goes all in with thick noodles, smoked bacon, kombu, and garnished with katsuoboshi. Salty, savory, creamy, cheesy — a Japanese-Italian mashup that totally works.

The Burrata Katsu (¥88) is exactly what it sounds like: they panko-coated and deep-fried an entire ball of fresh burrata. Crispy on the outside, gooey, cool, and creamy on the inside. The sauce is pure flavor: soy and ponzu with portobello mushrooms.

Finally, the Roasted Koji Akikawa Chicken Thigh (¥88) is crispy and flavorful, served with a chunky creamed cauliflower spiked with yuzu kosho and shio. The koji gives the chicken a light sweet-savory nuttiness.

Dessert

Save room for sweets, because they’ve put real thought into the desserts.

Shaped like a shih tzu and covered in cream, complete with beady little eyes, the Bean Paste Cream Dog (¥35) is their signature. I’m not usually a red bean person, but this one changed my mind. The house-made paste is light, balanced by the cream, while chunks of palm sugar mochi add a fragrant caramel note and a satisfying chew.

Then there’s the new Chocolate & Mochi Cake (¥48), which is like a cross between banana bread and a dark chocolate brownie. It’s dense and moist, not too sweet, topped with miso caramel and that delightful palm sugar mochi.

Spring-Summer Coolers

To wash it all down, they’ve launched a lineup of spring-summer drinks, all priced at ¥48.

My favorite is the Full of Passion! — exclamation mark warranted. It’s bubbly and fruit-bright, made with fresh passion fruit, Earl Grey tea, Thai basil, and sparkling water. A close second is the Hojicha Coconut Cloud, a smart combination of coconut water topped with hojicha whipped cream. Light and refreshing without too much bitterness. Stir the foam top into the drink.

A Day in Fuxing Park is a more subdued option, mixing pear purée, osmanthus syrup, matcha, and honey. Made with Meiji yogurt, blueberry, and fresh fig, the One and Only Smoothie is lighter than it looks, and doesn’t fill you up. It comes garnished with house-made granola.

If you’re in the mood for something stronger, they also do classic cocktails like an Aperol Spritz (¥68) and Strawberry Gin Fizz (¥78), plus highballs for ¥48, beers from ¥38, and wines by the glass from ¥68.
