​Maolago is a contemporary Guizhou restaurant by the OHA Group, which also runs Pass Residence, OHA Eatery, Restaurant Fu, Bar No. 3, and Dead Poet. There are two locations of Maolago. This one is a two-pronged concept; a first floor bar with small plates, and Guizhou-style hotpot on the second floor. Food on the first floor are mostly snack-sized dishes to accompany the cocktails and wine, and a couple of rice dishes with the trademark sour-spicy flavors of Guizhou. The second floor does hotpot, pretty self-explanatory: soup bases, meat, seafood and veg to boil in the broth, plus dipping sauce. But they do focus on Guizhou ingredients, including whole river fish.
