Near East Nanjing Road is Kingichi (无双东京豚骨拉面), a single-counter ramen shop that opened during the pandemic years. They do just four varieties of tonkotsu-based ramen soups alongside chicken karaage and fried pork cutlets. The Original Tonkotsu (甘露) is the one to get. The soup is thick and creamy, and despite its richness, it tastes remarkably clean, a testament to their technique, and perhaps also their premium price point. Their chashu is thick with a satisfying bite, and the pork bone broth is deeply flavorful and confidently executed. An alternative is the Spicy Tonkotsu (魔焱), which packs a serious kick, so proceed with caution. Don’t miss the Iberico Tonkatsu, either. It’s excellent.
