The Pine is an elegant fine dining restaurant that serves “Chinese-style French cuisine”. The restaurant has been around for some years, but recently relocated to a garden villa on Changle Lu, reopening with new chef Julia Yu at the helm. The Pine is part of the Light & Salt group.

The Space

It’s housed in a charming villa located in downtown Shanghai, on the border of Xuhui and Jing’an districts.

Dining rooms are cozy, spread out across multiple floors. It’s an elegant space with feminine characteristics accented with pink-orange velvet walls, retro patterned chairs, and soft-glowing fixtures—a destination for intimate dining.

The Food

The food is self-dubbed “Chinese-style French cuisine”. It’s basically a bit of both worlds, Western in appearance with some obvious Chinese ingredients and play on flavor.

Overall, the set menu was enjoyable. The food was well executed with good flavor profiles, and it was a well balanced meal. And while not quite perfect, I’d still recommend it.

Summer 2023 Menu

Here’s a snapshot of what to expect, featuring the summer 2023 menu:

Amuse bouche of caviar on puffed soya milk crisp.
Amuse bouche of gougères with caramelized onion and eggplant.
Scallop, orange, wasabi creme, citrus ice.
Oyster two ways
Wild rice shoots, parmigiano, mushrooms, and a herbal chicken consomme. Rich with fine textures and a delight.
Blue lobster poached with yellow wine, served with fennel bulb and bisque.
M7 wagyu with black truffle, rice cake, and crown daisy. The least interesting dish, underwhelming if not boring, save for the sticky rice “sandwich” topped with torched tripe.
Red horse head sashimi with shepherd’s purse, clam stock, and crunchy water chestnut.
Hiding underneath the sashimi are noodles colored with shepherd’s purse, cooked to firm with a bite.
Kumquot dessert with gardenia and extra virgin olive oil.

How Much

There are two tasting menus, Prestige (¥1,597) and Gourmet (¥1,697); 10% service charge applies. The current menu will be served until the end of September; menus change seasonally. Prices may be adjusted according to ingredients.
