The experience is led by chef Yoshi and bartender Jimmy, who infuse the evening with playful charm, creativity and whimsy.

The menu features seven creative food and drink pairings from one-bite tapas to mini Big Macs to oden and ochazuke with cocktails of shochu, bellinis, and hojicha. Some destinations are inspired by group principal Shingo Gokan’s other bars, including Sip & Guzzle (New York), The SG Club (Tokyo), and Devil’s Cut (Spain).

The pairings are diverse and imaginative, and the experience is flavorful and lively. It’s unstuffy and even a bit whimsical with plenty of theatrics. Expect to leave satisfied and pleasantly buzzed.

It officially launched March 1 and will continue to evolve as chef Yoshi and bartender Jimmy intend on updating the pairings as frequent as possible. The following is from the inaugural launch, an idea of what to expect.

The Pairing Menu

Venice/Italy – The first bite billows in. A neatly packaged caprese salad of prosciutto, mascarpone cheese, strawberries and caviar. Served with a Bellini spiked with tamarillo.

Ho Chi Minh/Vietnam – A spring roll with Japanese finesse. Fatty chutoro tuna is wrapped with pickled radish, cucumber and fresh herbs, a touch of XO sauce and a spray of absinth. It’s pretty tasty. The pairing is rice shochu with pineapple and lemongrass, a fruity and easy-to-drink tipple.

Paris/France – A fluffy omelette with mushrooms, parmesan, crumbled bacon, and freshly shaved black truffles, topped with chestnut sauce. A side of truffled honey for added luxury. Served with Café Noisette, a creamy coffee-based cocktail with a touch of chardonnay.

Madrid/Spain – A skewered tapa of briny olive and briny sardine with pickled guindilla pepper. Paired with bamboo-infused spirit and tomato water.

New York/USA – A baby Big Mac! A very well-made mini replica that delivers pure satisfaction. Paired with Cola XS, a creation of Sober’s making — tastes like rum and coke without actually using the soda.

Tokyo/Japan – A two-part oden dish that begins with skewered wagyu beef and seafood, gyoza, and vegetables, followed by a top up of soup for ochazuke rice. A comforting bite where you can request additional rice and soup. Paried with atsukan (warm sake), tomato, hojicha.

Brussels/Belgium – Chocolate and beer meet in the form of an ultra rich chocolate fondant with IPA cream, served with a fruity drink of Franboise lambic beer topped with amaro and sweet vermouth.

The “flight ticket” for this journey is ¥688, which includes seven bites paired with drinks.
