What is Panettone?

Panettone is not just a dessert; it’s a slice of Italian tradition and history.
Originally from Milan, panettone is a tall, dome-shaped sweet bread. Think of it as the love child of a cake and a brioche, with a personality as warm and inviting as an Italian nonna. Its hallmark texture is light and fluffy, yet rich , thanks to a long fermentation process that gives it its signature flavor — a subtle tang balanced by sweetness.

Historically, panettone’s origins are the stuff of legend, quite literally. One tale tells of a Milanese nobleman named Toni who disguised himself as a baker to woo his beloved and created this masterpiece of leavened dough. “Pane di Toni,” or Toni’s bread, supposedly became “panettone” over time. More likely, though, the dessert evolved as a luxury treat during the Renaissance, when sugar and dried fruits were rare indulgences. Either way, panettone has gone from being a regional specialty to a symbol of Italian Christmas, now enjoyed across the globe.

Traditionally, panettone is studded with candied citrus peels, raisins, and sometimes almonds, although modern versions have gotten creative with chocolate, nuts, or even exotic fruits. It’s sold as a whole dome or as wedges, best paired with a cup of coffee, hot chocolate, or sparkling wine. Sometimes, it is also served with a dollop of mascarpone or chocolate sauce.

Panettone in Shanghai is typically available from December, and some restaurants and cafés will usually carry them through New Year’s, while stocks last. It makes for a delicious treat or a thoughtful gift!

Bella Vita makes their own panettone locally using imported ingredients. They have the original with raisins and candied orange for ¥138/450g and a mini version for ¥68/130g. You can also order it as a slice in-store (¥48), served with pistachio mascarpone cream and orange marmalade.

Alimentari has an imported Chiostro di Saronno branded traditional panettone. It’s studded with a generous mix of dried fruit and candied orange peel. Whole panettone available in three sizes , 1kg (¥265), 750g (¥240), and 100g (¥48) with flavors of classic, pistacchio, and limoncello.

Mi Shang Prada Rong Zhai has a classic Milanese panettone made fresh by creative pastry director Diego Crosara. Three flavors available, classic (¥788/1kg) with raisins and candied fruit, chocolate (¥888/1kg), and candied chestnuts (¥888/1kg).

Options for leveling up the panettone are also available, including velvet gift boxes with silk inlays and artisanal decorations on the bread itself. The classic version is also available as a mini panettone (¥328/100g). Available for pre-order in-store.

Pain Chaud

French bakery Pain Chaud has two flavors of panettone, a classic (¥120/365g) and Pistachio Lava (¥158/450g), which come in gift pouch bags, available until the end of December. Their panettone is naturally fermented for 72 hours, resulting in a light fluffy crumb.

In addition, they have a panettone series, featuring the bread in all forms, including a latte, croissants, egg tarts, biscuits and more. Available at all Pain Chaud locations or via their mini-program. Delivery fees apply.

Starbucks Reserve has their own classic panettone (¥298/1kg), made fresh locally with imported wheat flour, raisins, candied orange, honey, and imported butter. They also have a pistachio chocolate version, same price. And you can get them by the slice in-store, too.
