Charbon by Paul Pairet
Charbon is a grill-centric restaurant by chef Paul Pairet (Polux, Mr & Mrs Bund, Ultraviolet), located in the iapm mall. The menu highlights elevated versions of skewers with global flavor profiles of tare, satay, miso, and more. Thick lamb shish kofta, juicy chicken satay, and even black cod with Singapore-inspired black pepper sauce. Starts at ¥50 a stick, served with sauces, herbs, and flatbread. The rest of the menu is populated by a dozen mezze starters and meaty mains. Charbon also does house-made soft serve ice cream, flavors include caramel butter soy (you read that right), mango raspberry melba, and more. The space is sleek, casual, and comfortable, and nice enough to distract from the florescent glare of the mall. Good for a casual meal.
