About MUST Wine & Grill

Established in 2012, MUST Wine & Grill (or MUST Grill for short) is a friendly neighborhood restaurant that’s well known for burgers and steaks, its convivial atmosphere, and value for money. It was called Wine Must in the beginning, named after the freshly crushed juice that contains the skin, seeds, and stem of the fruit.

Tucked away inside a lane on Wuding Lu, the restaurant is spacious yet homey, and boasts a massive terrace and a bright sun room. The vibe is casual, laidback, and unpretentious with genial service. It’s also great for large groups.

And when the weather’s nice, the expansive terrace draws a good crowd.

You might have first heard about MUST by way of their burgers, but there’s so much more to this humble restaurant than just that.

At its core, MUST is a grill restaurant, serving up steaks and fries along with French staples like baked camembert, beef tartare, and duck confit. The burgers at MUST Grill have been and still are solid, made with house-ground beef patties stacked on house-made milk buns. And they live up to their tagline: “Comfort food at comfort prices.”

So here it is, revisiting some of their signature dishes, and some delicious new entries like the mussel pasta, braised lamb shank, and truffle pasta.

Baked Camembert (¥138) – Umm…where have you been all my life? An entire round of camembert topped with chimichurri, broiled, and served sizzling. It immediately perfumes the room with its heady scent.

Absolutely molten. Goes perfectly with the house bread, which is served upon arrival, extra bread basket is ¥35.

South-West Salad (¥118) – The salads are bountiful, large enough to have as a main. This is the “Frenchiest” one, with slices of smoked duck breast and cured ham, tomato, hard-boiled egg, and mixed greens, topped with house made foie gras and dressed with vinaigrette. Delicious.

Flammekueche (¥68) – Also known as tarte flambée, is a thin savory tart originating from Alsace, France. Served here with a cumin cream base, topped with cheese, onion, and bacon. Light and enjoyable, good for apero.

Beef Tartare (¥188) – Nothing says rustic like a thick, hand-cut beef tartare. MUST uses beef tenderloin, the prime most cut that’s traditionally reserved for tartare. Seasoned with ketchup, mustard, and chili sauce, and molded with capers and white onion. Served with side salad or fries.

Mussel Linguini Pasta (¥138) – New on the menu are pasta. Generously laden with mussel mariniere and a bright cream-garlic-parsley reduction, dusted with paprika and topped with Italian parsley.

Tuna Mi-cuit (¥138) – Sesame crusted seared tuna with mash potato and asparagus.

Lamb Shank Confit (¥208) – A whole lamb shank slow-cooked for six-hour to a tender finish. Abundantly rich with flavor, served with buttery mash potatoes.

Beef Prime Rib (¥880/kg) – The show-stopper. This bone-in Australian Angus M3 prime rib weighs in at about 1.2kg.

Grilled to a medium rare, it’s served with black pepper and MUST sauce, an acidic, chimichurri-esque sauce.

Like all steaks, the prime rib comes with a salad and one side dish of choice. The Asparagus (¥35) is a good shout.

French Burger (¥118) – If you’re still craving burgers, MUST has five on the menu. This is the house signature, made with Angus beef patty, camembert cheese, grain mustard sauce, red cabbage, walnut, and honey, served with fries or salad.

La Ganache (¥58) – Chocolate ganache mousse, vanilla ice cream, walnut cookie crumble, fresh raspberries.

As for the wine list, it’s a curated selection by co-founder and tenacious host Cyril Pilard, who also runs a wine company.

Wines by the glass start from ¥40, bottles from ¥250, and there are a handful of rosés, including my recent favorite, Château Réal Martin Côtes de Provence (¥350/bottle). There are some great bottles within the ¥250-¥400 range, so don’t be shy to ask for a recommendation.
