Fresh oyster bar

The “From Sea To Table” seafood buffet at Portman’s Restaurant has 12 food stations, including an ice bar of fresh premium seafood like fresh oysters, king crab legs, mussels and Argentina red prawns, a sashimi station, fresh live shellfish for made-to-order wok stir-fry, glazed soyu salmon, cold appetizers, and desserts.

Singaporean Executive Chef Chia Jue Xian has also added an extra treat on top of the buffet spread with the Signature Singaporean Seafood Tray, served to every table à la minute with the ringing of a ship’s bell. It’s a mixed seafood platter of Boston lobster, abalone, clams, baby octopus, and crab, coated in the famed Singapore chili crab sauce of sweet chili sauce, fresh chilies, ginger, garlic and tomato.

There’s are also live stations for wok-fried shellfish and ravioli, and a carving station for roasted duck, soyu-glazed salmon, and roasted beef prime rib.
