Portman’s Restaurant at The Portman Ritz-Carlton, Shanghai recently refreshed its daily lunch buffet — at only ¥238 per person — introducing a new Farm To Table station, spotlighting fresh, sustainable, and locally sourced ingredients.
Portman’s Restaurant Lunch Buffet

The Farm to Table station offers a rotating selection of seasonal produce and artisanal goods from nearby farms committed to eco-friendly practices, curated by Executive Chef Xian.

Currently, the restaurant is serving a Mongolian-Style Roasted Lamb Leg, sourced from a farm in Inner Mongolia known for its sustainable practices.

The lamb will be available until February 23, and will be followed by Oil-Braised Spring Bamboo Shoots, from February 24 to March 9, and Shanghainese Bamboo Shoot Soup with Salted Pork, known as yan du xian (腌笃鲜), from March 10 to 23.

Yan Du Xian is a traditional soup dish from the Jiangnan region, best enjoyed in spring when fresh bamboo shoots are at their peak. Its rich and savory flavor comes from cured pork and pork belly, which create an umami-packed broth that complements the crunchy bamboo shoots perfectly.
On weekends, there’s an additional Pass Around Menu, a complimentary add-on to the buffet. This features creative dishes crafted by Chef Xian, updated every two weeks.

Dishes include Shanghainese Braised Pork with Quail Eggs (February 15-23), while upcoming dishes include Shepherd’s Purse Winter Bamboo Spring Rolls (March 1-9) and Spring Bamboo Shoots with Shrimp Roe (March 15 to 23). The latter is similar to Oil-Braised Spring Bamboo but features an added layer of flavor from shrimp roe, giving it a richer and more complex taste.
The Buffet Spread

The buffet itself is a feast. A standout is the sashimi station, featuring fresh salmon and tuna, alongside a seafood-on-ice display with steamed prawns, flower clams, sea whelk, green mussels, and white clams.

The live carvery station offers rotating options like beef striploin, pan-seared pork chops, roasted lamb leg, and roasted beef tenderloin, served with jus, sauces, and condiments.

For noodle lovers, there’s a dedicated station serving dishes like seafood laksa, beef ball noodles, and scallion oil noodles with fried pork chops.

Hot dishes rotate weekly and include wok-fried seafood char kway teow, chili crab, steamed sea bass, black pepper crab, Nasi Lemak, Malaysian-style fried chicken, beef bolognese, and smoked salmon fried rice. And yes, there are quite some Malaysian dishes, a nod to Chef Xian’s Malaysian roots.

The buffet also includes a selection of dim sum, a salad bar, charcuterie, freshly baked breads, and daily soups of both Chinese and Western.

For dessert, fresh fruit provides a light finish, but those with a sweet tooth can indulge in ice cream, a chocolate fountain, bite-sized cakes and pastries, or the crowd-pleasing bread pudding.
