Jade on 36 launches a new summer menu courtesy of chef Olivier Pistre. Celebrate an occasion with modern French cuisine set to the panoramic backdrop of the Shanghai skyline.

Nestled within the Pudong Shangri-La, Shanghai, Jade on 36 is a stylish and sophisticated haven that seamlessly blends elegance with a relaxed atmosphere.

The restaurant’s stunning view of the Shanghai skyline has made it a sought-after destination for special celebrations and occasions.

During the day, it is favored by business dining and ladies who lunch, and evenings set a romantic tone for an intimate dinner.
New Menu at Jade on 36
The new summer menu, available for both lunch, brunch, and dinner, features a variety of dishes that showcase Chef Olivier Pistre’s culinary prowess.

Standout dishes include Ningxia Lamb, wild porcini mushrooms, seabream ceviche, and a refreshing summer beef and carrot appetizer.

Lunch is ¥228 for two courses and ¥318 for three courses. Dinner is ¥588, ¥788, and ¥1,088 for five, six, and seven courses. As for weekend brunch, it’s ¥588 per person for a six-course set, including one glass of prosecco or Bloody Mary or unlimited coffee, tea, and soft drinks.

Every table at Jade on 36 is treated to a complimentary breadbasket, brimming with freshly baked French breads such as buttery croissants and aromatic rye rolls, accompanied by amuse bouche and canapés.

Of the courses, the standout dish was the Ningxia Lamb. It is a serving of seared lamb loin crusted with pistachio powder, served with slow-cooked lamb shoulder, grilled eggplant and baba ganoush, chimichurri, berries, and crisped chorizo. The lamb is tender and flavorful with a hint of smokiness and is elevated by a tarragon lamb jus.

Another dish that impressed was the Seabass. Steamed seabass is served with house-made ravioli filled with mussels and Boursin cheese, paired with a parsley and shellfish sauce. It is a delicate dish of flaky and naturally sweet fish, paired with delicious ravioli.

Honestly, the ravioli itself was so perfect, it most certainly could be a dish on its own. The seabass is only available during lunch, and it is a good value option as a main course.
Appetizers feature Porcini mushrooms, sautéed in a heady and earthy jus with confit eggplant, parmesan cheese, candied walnuts, arugula, and cured egg yolk.

A standout appetizer is the Beef & Carrots Texture, which was not only impressive in presentation but for its delicate summer flavors. It’s made with pickled carrots, painstakingly twisted into shape over braised beef with beef consommé and carrot sorbet.

The summer theme continues with a bright and citrusy Yellowtail, also a lunch-only dish. Slices of cured yellowtail fish are coated in a thick savory dressing and is accompanied with dashi-marinated olives, heirloom tomatoes, and sundried tomatoes.

For a spot of luxury, there’s the New Zealand King Langoustine. This high-quality premium ingredient is lightly battered and fried, served with citrusy and tart pairings of lemon balm, yogurt, and thyme. It’s a veritable treat.

The langoustine is also served with a side of seafood soup.

For dessert, nothing says summer more than the Lemon. It’s a shell of white chocolate encasing confit lemon, gel, and mousse. It is sour, only slightly sweet and refreshing.

Jade on 36 also offers wine pairings, ranging from ¥388 to ¥688, and a curated selection of Burgundy wines to complement your dinner.

The Burgundy wine pairing dinner, featuring a Chablis, 2020 William Fevre, and Marsannay, 2018 Bruno Clair, is priced at ¥999 for five courses and two glasses of wine, available until September 30.
