The Long Bar at The Waldorf Astoria Shanghai has long been the destination for oysters and champagne, a timeless pairing enjoyed there by many since the 19th century.

To revitalize that spirit with a modern twist, they’ve launched PINK OYSTER, a 10-course degustation menu dedicated to oysters at an intimate 8-seater counter. Dinner is ¥798 plus service charge, includes one glass of rosé champagne.

About The Long Bar, Waldorf Astoria Shanghai

PIИK OYSTER is the hotel’s “sixth restaurant,” an intimate 8-seater oyster bar located within The Long Bar, a locale that’s steeped in history.

The Long Bar stands at 34 meters long; it was at one point the longest bar in the world. It is a surviving vestige from the 1900s, famously known for being the social epicenter for The Shanghai Club.

Today, it’s a sultry lounge and cocktail bar with live jazz performances, and remains to be an unmissable attraction on the Bund.

The Menu: PIИK OYSTER

The menu at PIИK OYSTER is all about oysters, some made and paired with Perrier-Jouët rosé champagne.

Oysters, imported and local, are prepared raw, confit, smoked, poached, grilled, steamed, and sauced with a myriad of accompaniments to create a robust dinner experience.

Dinner is 10 to 11 courses, depending on availability of oysters and produce; dishes to change based on availability of ingredients and menu to change seasonally. Oyster origins include France, USA, New Zealand, Canada, China, Korea, etc.

To start, freshly shucked Gillardeau No. 1 oyster with a complimentary glass of Perrier-Jouët rosé champagne.

Pink Mary Oyster Shooter – Fresh tomato purée spiked with Tabasco and a Marlborough, New Zealand oyster.

Amberjack from Fujian lightly seared and dusted with light spices; 48-hour confit oyster in black and white garlic oil with rice oil, tangerine peel, chili, and thyme.

A trio of raw oysters with dressings of finger lime mignonette, rosé champagne jelly, and grated pink guava. Sauces may change based on oyster selection.

Dishing out some theatrics is the smoked sea urchin (Dalian), served in an imposing smoke-filled glass chamber over a recreated seabed. Creamy, briny oyster imbued with smoky aromas livened by the crisp salinity of crunchy sea grapes.

Pho Consommé – Housemade vermicelli blended with bits of fresh oyster served in a delicious 3-hour beef broth. A flavorful broth with tender noodles and basil; a welcome peak in the meal that warms the bones.

Steamed oyster topped with Yunnan matsutake. A fat and creamy oyster with woody, earthy mushrooms, perfumed with lemon leaf. A fantastic combination.

Char-grilled oyster with butter and bits of crispy beef bacon, a twist on the Oysters Rockefeller of sorts. Served with spicy barbecued green chilies.

Nourin + Wuchang, named for the two kinds of high-grade rice used in the dish. Served with a house-made oyster sauce, painstakingly created by cooking down oysters with aromatics and dried razor clams.

Sauced dried tofu, edamame, and root vegetables served atop rice, accompanied by a clear snow crab broth. Effortlessly delivering comfort in a “fine dining” style meal. Plus, you can ask for a top up of rice and veg.

Finally, petit fours from the dessert trolley.

For Drinks

For drinks, you can opt for drinks from the bar. There’s also a pink oyster champagne deal, ¥998 for a bottle of Perrier-Jouët Blason Rosé champagne, or a wine and whiskey pairing, three glasses for ¥388. Prices subject to service charge.

As far as value goes, this menu is rather amiable. A dozen oysters at some venues might set you back ¥300. This is an entire social experience with live music at the end; the live jazz and R&B band starts at 9pm.

Highly recommend staying for a drink at the bar post dinner.
