La Scala

It’s led by Chef de Cuisine Antonio Corsaro, who joined the hotel a little over a year ago. He was previously based in Europe, where he spent 17 years honing his skills at some of the most elite establishments, including Michelin-starred restaurants by Alain Ducasse.

He’s created some new winter dishes, featuring seasonal ingredients of wild mushrooms, alongside high-quality venison and oxtail. These dishes are available a la carte for lunch and dinner.

Here’s what to expect:

Warm Burrata Salad (¥168) served with grilled winter root vegetables, king oyster mushroom, genovese pesto, pumpkin purée, lightly pickled beetroots, and aged balsamic vinegar.
Paccheri Pasta with Wild Mushrooms (¥228) – Paccheri pasta with chestnut purée and six different kinds of wild mushrooms, topped with shavings of black truffle. Excellent textures and flavors of mushrooms. Also a vegetarian dish. My favorite of these dishes.

Oxtail Pappardelle alla Vaccinara (¥238) – Handmade pappardelle served with slow-stewed oxtail, topped with cacao powder, pine nuts, and raisins. It’s an ultra rich dish. The sweetness of the raisins and light bitterness of the cacao helps cut the fattiness of the oxtail. Lovely dish.

Roasted Turbot (¥358) – Turbot roasted on the bone with poached mussels, mushrooms, and celeriac purée, topped with a rich sauce made with fish head and mussel juice.

Venison Loin (¥298) – Roasted venison with wild berries, beetroot, pink peppercorns, and chestnuts. The common misconception is that all venison tends to be gamey, but when cooked/treated right, it’s a deliciously tender cut of meat, like this one, which was cooked to medium rare. The texture tends to be grainy when cooked medium or well done.
